"Wow Annie, I made salad for lunch today, arugula, escarole and cherry tomatoes. I season with olive oil, fresh minced garlic, salt and nutritional yeast flakes. It was so good, I practically ate just salad for lunch, I kept going back for more! Earlier in the week, we (my children and I) had salad with green leaf lettuce (which does not hold up as long compared to other greens like romaine) and no one was interested in seconds. Today they were asking for more and more, imagine that, my 6 and 3 year old. My 3 year old loved the cherry tomatoes. I had to tell him, "Save some for tomorrow." Who says children don't eat their vegetables. The secret is getting good, fresh, tasty veggies, then the children can appreciate the taste for what they really are.
